Jen's Spinach Salad
One Bag of Spinach
Olive Oil
Balsamic Vinegar
Blue Cheese
Dried Cranberries
Candied Nuts (I like Trader Joe's Sweet & Spicy Pecans or Emeril's Spiced Nuts)
Ok, this is a piece of cake.
1. Open bag of spinach and put in big salad bowl
2. Take your bottle of olive oil and pour in a circle motion over your spinach for about 1 second. Do the same with your Balsamic Vinegar.
3. Toss your salad well.
4. Sprinkle blue cheese, dried cranberries and crumbled candied nuts over salad to your liking.
5. Serve.
This salad is so easy and always gets rave reviews. I think the secret is the combination of cheese, dried fruit, and nuts.
So, mix it up... use feta, gorgonzola, parmesan, or goat cheese.... try cut up dried apricots, cherries or mango... experiment with candied walnuts or toasted pine nuts...
